
Mexican Vegetarian Nachos, recipe shared by Samantha :) Freestyle it and add your own touch if you like!
Lentil mix made with kidney beans, red lentils and yellow split pea, spinach, red cabbage, carrot, toasted fresh sweet corn, pulped tomato, a little tomato paste, fresh herbs and Mexican spice mix.
Serve over tortilla chips with hummus, sour cream, Parmesan, fresh coriander and a salad. you can use this mix with burritos or quesadilla too. It’s a fave with the kids too!
