Spinach and Feta Scramble Egg Pitas

 

Ingredients:

  • 1 tbsp olive oil
  • 3 handfuls of spinach
  • 8 large eggs, beaten
  • 1/4 cup crumbled feta
  • 8 teaspoons of sun-dried tomato pesto (or basil pesto)
  • 4 wholewheat pitas, cut in half, warmed

 

Method:

  1. Heat oil in fry pan over medium heat. Add spinach and salt, stirring occasionally.
  2. Add eggs and cook, stirring eggs as they set, until they form soft lumps and still slightly moist, 4 to 5 minutes.
  3. Add feta and pepper and cook until set.
  4. Spread pesto inside warmed pita pockets. Divide the egg mixture between pitas.
