Thai-Style Meatloaf


We can't believe it's winter already! But here's one for the tastebuds - let the flavours of Thailand take you away to a warm beach somewhere far away...

Ingredients:

  • 450g lean pork mince
  • ½ cup rolled oats
  • 1 courgette, grated
  • 2 carrots, grated
  • 2 spring onions, finely chopped
  • 1 clove garlic, finely chopped
  • 2 teaspoons fish sauce
  • 2 tablespoons grated fresh ginger
  • 2 tablespoons chopped fresh coriander
  • 1 fresh chilli, finely chopped or 1-2 teaspoons dried chilli flakes
  • freshly ground black pepper, to taste

 

Method:

Preheat oven to 180°C. Use your hands to mix all ingredients together well in a large bowl. Line a loaf tin with greaseproof paper and press mixture into tin. Smooth the top evenly.

Place in oven and cook for 50 minutes-1 hour or until juices run clear. (If you have a meat thermometer, check the internal temperature of your meatloaf has reached a temperature of 74°C for at least 15 seconds.)
