Chilli Con Carne


This Chilli Con Carne is perfect for a quick, easy, delicious Dinner! 

INGREDIENTS:

  • 1 Tbsp Olive Oil
  • 2 Cloves garlic, minced
  • 1 brown onion, diced
  • 2 medium carrots, grated
  • 2 Capsicums, chopped
  • 500g lean beef, minced
  • 1tsp Chilli powder
  • 1tsp Paprika
  • 1tsp ground cumin
  • 400g canned diced tomatoes
  • 400g canned black beans or

              red kidney beans

  • 1 cup beef stock

 

METHOD:

Heat oil in large frying pan

Add onion and cook for a few minutes, add garlic and other spices and cook for another minute until fragrant.

Add mince and cook 7-8 minutes until brown, then add carrots, capsicum, canned tomoatoes, beans and beef stock.  Mix well and simmer on a low heat for 15-20 minutes uncovered until sauce thickens.

Serve with rice and Iceberg lettuce (if in season), topped with grated cheese and a Tbs natural yogurt.
